1 pound (450g) shrimp, peeled and deveined

2 large cucumbers, thinly sliced

1 cup cherry tomatoes, halved

½ red onion, finely diced

1 avocado, diced

3 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon Dijon mustard

1 teaspoon garlic powder

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

Fresh dill or parsley, for garnish

Instructions
 

Cook the Shrimp: In a medium pot, bring water to a boil. Add the shrimp and cook for about 3-4 minutes or until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the shrimp are cooling, slice the cucumbers, halve the cherry tomatoes, and dice the avocado and red onion. Place all the veggies in a large mixing bowl.
