2 large cucumbers, thinly sliced

1 medium red onion, thinly sliced

1/4 cup apple cider vinegar or white wine vinegar

2 tablespoons olive oil

1 tablespoon raw honey or agave syrup

1 teaspoon Dijon mustard

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

2 tablespoons freshly chopped dill or parsley for garnishing
