1 large cucumber

8 ounces cream cheese, softened

2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

8 slices of whole grain bread (or white bread for a classic touch)

Optional toppings: microgreens or arugula

Instructions
 

Prepare the Cucumber: Start by washing the cucumber thoroughly. Slice it thinly into rounds (about 1/8 inch thick) and set aside. For a more elegant presentation, you can peel alternating strips of skin off the cucumber.

    Make the Cream Cheese Spread:

      - In a mixing bowl, combine the softened cream cheese, fresh dill, lemon juice, garlic powder, salt, and black pepper.

        - Mix with a fork or a hand mixer until the ingredients are well incorporated and the spread is creamy.

          Assemble the Sandwiches:

            - Lay out the slices of bread on a clean surface.

              - Spread a generous layer of the cream cheese mixture on one side of each slice.

                - Place several cucumber slices on half of the bread slices. If desired, add a few microgreens or arugula on top for added flavor and a pop of color.

                  Complete the Sandwiches:

                    - Top each cucumber-topped slice with another slice of bread, cream cheese side down, to make a sandwich.

                      - Press gently to help hold the sandwiches together.

                        Cut and Serve:

                          - Carefully cut each sandwich into quarters or halves, depending on your desired serving size.

                            - Arrange them on a platter and serve immediately or refrigerate until ready to serve.
