Cucumber Avocado Summer Rolls

Ingredients
  

8 rice paper wrappers

1 large cucumber, julienned

1 ripe avocado, sliced

1 medium carrot, julienned

1 red bell pepper, julienned

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 cup lettuce (butter or romaine), torn into small pieces

1/2 cup cooked vermicelli noodles (optional)

1/4 cup soy sauce or tamari (for dipping)

1 tablespoon sesame oil (for dipping)

1 tablespoon lime juice (for dipping)

1 teaspoon honey or agave syrup (for dipping)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the julienned cucumber, carrot, red bell pepper, and cooked vermicelli noodles if using. Set aside.

    Make the Dipping Sauce: In a small bowl, whisk together the soy sauce, sesame oil, lime juice, and honey/agave syrup. Adjust the sweetness or acidity according to your preference. Set aside.

      Soften the Rice Paper: Fill a shallow bowl or pie dish with warm water. Submerge one rice paper wrapper in the water for about 5 seconds, or until it softens but is still slightly firm (it will continue to soften after you remove it). Carefully lift it out and lay it flat on a clean surface or cutting board.

        Assemble the Rolls: On the bottom third of the rice paper, layer a few mint leaves, cilantro leaves, a small handful of the vegetable mixture, and a few slices of avocado. Leave about an inch of space on the sides.

          Roll it Up: Start rolling the spring roll away from you, tucking in the sides as you go to seal the filling. Aim for a tight roll but avoid tearing the rice paper. Place the completed roll seam-side down on a plate. Repeat with the remaining rice paper wrappers and filling ingredients.

            Serve: Arrange the summer rolls on a serving platter. Serve fresh with the dipping sauce on the side.
