2 large cucumbers, diced

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

Salt and pepper to taste

Optional: Crumbled feta cheese or toasted sunflower seeds for topping

Prepare the Vegetables: Start by rinsing the cucumbers under cold water. Peel if desired, and then dice them into bite-sized pieces. Place the cucumbers in a large mixing bowl.

    Dice Avocado: Cut the avocado in half, remove the pit, and scoop the flesh out of the skin. Dice the avocado into similar-sized pieces as the cucumbers, and add it to the mixing bowl.

      Add Tomatoes and Onion: Add the halved cherry tomatoes and finely chopped red onion to the bowl with cucumbers and avocado.

        Dress the Salad: In a small bowl, whisk together the lime juice and olive oil. Pour the dressing over the salad mixture.

          Season and Toss: Add salt and pepper to taste. Gently toss the salad to combine all the ingredients without mashing the avocado.
