3 cups green cabbage, finely shredded

2 cups red cabbage, finely shredded

1 cup carrots, grated

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed and halved

1/2 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/2 cup roasted peanuts, roughly chopped

For the Peanut Dressing:

1/4 cup creamy peanut butter

3 tablespoons soy sauce (low sodium)

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 tablespoon fresh lime juice

1 teaspoon minced garlic

1 teaspoon grated ginger

1/4 teaspoon red pepper flakes (optional for heat)

Water, to thin the dressing

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, sliced red bell pepper, snap peas, chopped cilantro, and green onions. Toss together to mix evenly.

    Make the Dressing: In a medium bowl, whisk together the creamy peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, lime juice, minced garlic, grated ginger, and red pepper flakes. If the dressing is too thick, add water, a tablespoon at a time, until you reach your desired consistency.

      Combine the Slaw and Dressing: Pour the peanut dressing over the slaw mixture. Using tongs or two forks, gently toss to coat all the ingredients in the dressing thoroughly.

        Chill and Serve: Let the slaw sit for at least 15 minutes at room temperature, or place it in the refrigerator for a more chilling effect. This allows the flavors to meld together. Before serving, sprinkle the chopped roasted peanuts over the top for added crunch.
