Ingredients

1 lb ground turkey (or beef)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon oregano

½ teaspoon salt

¼ teaspoon black pepper

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 head of iceberg or romaine lettuce, leaves separated and washed

1 cup shredded cheese (cheddar or Mexican blend)

½ cup sour cream or Greek yogurt

1 avocado, diced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Cook the Meat: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic, and cook for an additional 1 minute until fragrant.

Brown the Meat: Add the ground turkey (or beef) to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 6-8 minutes.

Season the Mixture: Once the meat is cooked, drain any excess fat. Add chili powder, ground cumin, paprika, oregano, salt, and black pepper. Stir to combine and cook for another 2 minutes to allow the spices to toast slightly.

Mix in Beans and Corn: Gently fold in the rinsed black beans, corn, and diced tomatoes. Cook for an additional 3-5 minutes until everything is heated through.

Prepare the Lettuce Wraps: While the filling is cooking, carefully separate the lettuce leaves. These will be your tacos, so aim for larger, sturdy leaves.

Assemble the Tacos: Spoon a generous amount of the meat and bean mixture onto the center of each lettuce leaf. Top with shredded cheese, diced avocado, and a dollop of sour cream or Greek yogurt.

Garnish: Sprinkle fresh cilantro over the top and serve with lime wedges on the side for an extra burst of flavor.

Serve and Enjoy: Enjoy your crunchy taco lettuce wraps fresh and warm. They’re perfect as a low-carb option or a refreshing dish for your next gathering!
