3 medium cucumbers, thinly sliced

1 teaspoon salt

1 tablespoon sugar

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon chili paste (adjust to taste)

2 cloves garlic, minced

2 green onions, thinly sliced

1 tablespoon sesame seeds, toasted

Fresh cilantro leaves for garnish (optional)

Instructions
 

Prepare the Cucumbers: Place the sliced cucumbers in a large bowl. Sprinkle with salt and sugar, and mix well. Let them sit for 10-15 minutes to draw out excess moisture.

    Make the Dressing: In a separate small bowl, whisk together rice vinegar, soy sauce, sesame oil, chili paste, and minced garlic until combined.

      Combine Ingredients: After the cucumbers have released some of their water, drain excess liquid. Add the dressing to the cucumbers, and toss until well coated.
