Crunchy Sesame Garlic Edamame

2 cups edamame (in pods, frozen or fresh)

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame seeds (preferably black and white mixed)

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon honey (or agave for a vegan option)

Salt, to taste

Freshly cracked black pepper, to taste

Chopped green onions, for garnish

Instructions
 

Prepare the Edamame: If using frozen edamame, bring a pot of salted water to a boil. Add the edamame pods and cook for 3-5 minutes until tender but still crunchy. If using fresh edamame, cook similarly until vibrant and tender. Drain and set aside.

    Make the Garlic Sauce: In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Combine Ingredients: Reduce heat to low and stir in the soy sauce, rice vinegar, honey, red pepper flakes, salt, and pepper. Mix well to combine all ingredients.

        Add Edamame: Toss the cooked edamame into the skillet, coating them well with the garlic sauce. Continue to cook for another 2-3 minutes until the edamame is slightly crispy and the sauce thickens.

          Finish with Sesame Seeds: Sprinkle the sesame seeds over the edamame and stir to combine. Cook for an additional minute until the seeds are toasted, which enhances their flavor.

            Serve: Remove from heat and transfer the edamame to a serving bowl. Garnish with chopped green onions for a fresh touch.
