2 large English cucumbers

½ cup sliced red bell pepper

¼ cup grated carrots

¼ cup thinly sliced red onion

2 tablespoons sesame seeds (toasted)

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey (or maple syrup for a vegan option)

1 clove garlic, minced

1 teaspoon freshly grated ginger

Salt and pepper to taste

Fresh cilantro or green onions for garnish

Start by washing the cucumbers thoroughly. Cut them in half lengthwise, then slice them into half-moons about ¼-inch thick. Place the cucumber slices in a large salad bowl.

    Add the sliced red bell pepper, grated carrots, and red onion to the bowl with the cucumbers. Toss gently to combine all the vegetables.

      In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger until well combined. Adjust seasoning with salt and pepper to taste.
