Crunchy Pita Crusted Tofu Bites

1 block (14 oz) firm tofu, pressed and drained

2 large whole wheat pita bread

1/2 cup all-purpose flour (or gluten-free flour)

1/2 cup cornmeal

1/4 cup nutritional yeast

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsweetened plant-based milk (e.g., almond or soy)

2 tablespoons soy sauce or tamari

1 tablespoon olive oil (for greasing)

Instructions
 

Prep the Tofu: Begin by preheating your oven to 400°F (200°C). Cut the pressed tofu into bite-sized cubes, approximately 1-inch pieces. Set aside.

    Prepare the Pita Crust: In a food processor, combine the whole wheat pita bread, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper. Pulse until the mixture resembles fine crumbs. Transfer the crumbs to a shallow bowl or plate.

      Create the Breading Station: Set up a breading station with three shallow bowls: one with flour, one with the plant-based milk mixed with soy sauce, and one with the pita crumb mixture.

        Bread the Tofu: Dip each tofu cube first into the flour, then into the plant-based milk mixture, allowing excess to drip off, and finally coat it in the pita crumb mixture. Press down gently to ensure a good coating. Repeat for all tofu cubes.
