Crunchy Parmesan Asparagus Fries

1 lb fresh asparagus, trimmed

½ cup all-purpose flour

2 large eggs

1 cup coarse breadcrumbs (panko preferred)

½ cup freshly grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

Salt and pepper to taste

Olive oil spray

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare three shallow bowls:

      - In the first bowl, add the all-purpose flour and season with a pinch of salt and pepper.

        - In the second bowl, beat the eggs until frothy.

          - In the third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, and a pinch of salt and pepper. Mix well.

            Working one asparagus spear at a time, first coat it in the flour thoroughly, shaking off any excess.

              Next, dip the floured asparagus into the beaten eggs, ensuring it's coated evenly.

                Finally, roll the asparagus in the parmesan breadcrumb mixture, pressing gently to ensure the crumbs adhere well. Place each coated spear on the prepared baking sheet.

                  Once all asparagus spears are coated, lightly spray them with olive oil to help with crisping.

                    Bake in the preheated oven for about 15-20 minutes, or until they are golden brown and crispy. Turn the spears halfway through the baking time for even crispiness.
