Crunchy Jalapeño Cheese Bites

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup finely diced jalapeños (seeds removed for less heat)

1/4 cup green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon paprika

1 cup panko breadcrumbs

1 cup all-purpose flour

2 large eggs, beaten

Cooking oil (for frying)

Salt and pepper to taste

Prepare the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, chopped green onions, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined and set aside.

    Shape the Bites: Using your hands, scoop about a tablespoon of the cheese mixture and roll it into a ball. Repeat until all of the filling is used, placing the balls on a parchment-lined baking sheet.

      Set Up Breading Stations: In three separate shallow dishes, place the flour in one dish, the beaten eggs in another, and the panko breadcrumbs in the last.

        Bread the Bites: Take each cheese ball and first roll it in the flour until fully coated. Shake off any excess flour, then dip it in the beaten eggs, and finally roll it in the panko breadcrumbs, ensuring it's fully coated. Repeat until all cheese bites are breaded.

          Fry the Bites: In a deep frying pan or a deep fryer, heat the cooking oil to 350°F (175°C). Carefully place a few cheese bites into the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

            Serve Warm: Allow the cheese bites to cool slightly before serving. They can be enjoyed on their own or with your favorite dipping sauce, such as ranch or a spicy aioli.
