1 small green cabbage, finely shredded

2 large carrots, grated

1 large apple (preferably a tart variety like Granny Smith), julienned

½ cup of fresh cilantro, chopped

1 cup of red grapes, halved

1 cup of walnuts or pecans, roughly chopped

½ cup of plain Greek yogurt

2 tablespoons of apple cider vinegar

1 tablespoon of honey or maple syrup

Salt and pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the finely shredded cabbage, grated carrots, julienned apple, chopped cilantro, and halved grapes.

Toast the Nuts: In a dry skillet over medium heat, toast the walnuts or pecans for about 5 minutes until they are fragrant and slightly browned. Remove from heat and let them cool.

Make the Dressing: In a separate small bowl, whisk together the plain Greek yogurt, apple cider vinegar, honey (or maple syrup), and a pinch of salt and pepper until well combined.

Combine Salad and Dressing: Pour the dressing over the vegetable mixture and toss gently to ensure everything is evenly coated.

Add Nuts: Finally, fold in the cooled toasted nuts for an extra layer of crunch.

Chill and Serve: Allow the coleslaw to chill in the refrigerator for at least 30 minutes before serving to let the flavors meld together. Serve chilled and enjoy this refreshing crunchy apple coleslaw!
