Ingredients

16 oz penne pasta

1 can (28 oz) crushed tomatoes

1 can (15 oz) tomato sauce

1 small onion, diced

3 cloves garlic, minced

1 1/2 cups vegetable broth

2 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1 cup fresh basil leaves, chopped

1 cup grated Parmesan cheese (plus more for serving)

Salt and pepper to taste

2 tbsp olive oil

Instructions

Prep the Base: In your crockpot, combine the crushed tomatoes, tomato sauce, vegetable broth, diced onion, minced garlic, Italian seasoning, red pepper flakes, and olive oil. Stir well to combine all ingredients.

Add the Pasta: Sprinkle in the penne pasta, ensuring it is submerged in the sauce mixture. This helps it cook evenly and soak up all the delicious flavors.

Cook: Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours. Stir the mixture about halfway through if possible, to help the pasta cook through.

Final Touches: Once the pasta is cooked to al dente, stir in the chopped fresh basil and grated Parmesan cheese. Season with salt and pepper to taste. Allow to sit for an additional 10 minutes with the lid on to let the flavors meld.

Serve: Dish out the pasta into bowls, garnishing with additional Parmesan cheese and a sprinkle of fresh basil if desired. Enjoy your heartwarming meal!
