Crockpot Chicken Parm Meatballs

1 pound ground chicken

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (Italian seasoned preferred)

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 jar (24 oz) marinara sauce

2 cups shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Meatballs: In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, breadcrumbs, chopped parsley, minced garlic, egg, dried oregano, salt, and black pepper. Mix until just combined, being careful not to overmix.

    Shape Meatballs: Roll the mixture into small meatballs, about 1-1.5 inches in diameter, and set aside on a plate.

      Layer in the Crockpot: Pour a small amount of marinara sauce (about 1/4 of the jar) on the bottom of the crockpot. Place the meatballs in a single layer on top of the sauce. Pour the remaining marinara sauce over the top of the meatballs.

        Cook: Cover the crockpot and set it on low heat. Cook for 4-6 hours, or until the meatballs are fully cooked (internal temperature of 165°F).

          Add Cheese: About 30 minutes before serving, sprinkle the shredded mozzarella cheese over the meatballs. Cover and continue cooking until the cheese is melted and bubbly.

            Serve: Once cooked, gently stir the meatballs in the sauce to coat them. Serve the meatballs over spaghetti or your favorite pasta, garnished with fresh basil leaves and extra Parmesan cheese if desired.
