Crispy Tortilla Wraps with Chicken and Veggies

Ingredients
  

2 large chicken breasts, thinly sliced

1 cup bell peppers (red, yellow, and green), thinly sliced

1 medium onion, sliced

2 cloves garlic, minced

1 small zucchini, julienned

1 tsp cumin

1 tsp smoked paprika

1 tsp chili powder

Salt and pepper, to taste

1 tbsp olive oil

4 large flour tortillas

1 cup shredded cheese (cheddar or a blend)

1 cup lettuce, shredded

½ cup sour cream or Greek yogurt, for serving

Fresh cilantro, for garnish (optional)

Instructions
 

Marinate the Chicken:

    - In a bowl, combine sliced chicken, cumin, smoked paprika, chili powder, salt, and pepper. Drizzle with 1 tablespoon of olive oil and toss until the chicken is coated. Cover and marinate for at least 30 minutes (or overnight for optimal flavor).

      Cook the Chicken:

        - In a large skillet over medium-high heat, add the marinated chicken. Cook for about 6-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

          Sauté the Vegetables:

            - In the same skillet, add a bit more olive oil if necessary. Add minced garlic, onions, bell peppers, and zucchini. Sauté for about 5-6 minutes, or until the vegetables are softened but still vibrant in color. Season with salt and pepper.

              Combine Chicken and Veggies:

                - Return the cooked chicken to the skillet with the sautéed vegetables. Mix everything together and cook for an additional 2 minutes to let the flavors meld.

                  Assemble the Wraps:

                    - On each tortilla, layer a handful of shredded lettuce, followed by the chicken and veggie mixture. Top with shredded cheese.

                      Crisp the Wraps:

                        - Roll the tortillas tightly, folding in the sides as you go. In the same skillet, add a bit of oil over medium heat. Place the wraps seam-side down and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.

                          Serve:
