4 large flour tortillas

4 large eggs

1 cup shredded sharp cheddar cheese

1/2 cup diced bell peppers (mixed colors)

1/2 cup cooked and crumbled breakfast sausage or diced ham

1/4 cup chopped green onions

1/2 teaspoon garlic powder

Salt and pepper, to taste

2 tablespoons olive oil (for frying)

Optional: Salsa, sour cream, or avocado for serving

Prepare the Filling: In a medium bowl, whisk the eggs with the garlic powder, salt, and pepper. Stir in the diced bell peppers, breakfast sausage (or ham), and chopped green onions.

    Cook the Eggs: Heat a non-stick skillet over medium heat and lightly coat with olive oil. Pour the egg mixture into the skillet. Cook, stirring occasionally, until the eggs are just set but still slightly soft (about 3-4 minutes). Remove from heat.

      Assemble Quesadillas: Place one tortilla on a clean, flat surface. Spoon a quarter of the egg mixture on one half of the tortilla. Sprinkle a quarter of the shredded cheddar cheese over the eggs. Fold the tortilla over to cover the filling, pressing gently to seal.

        Fry the Quesadillas: In the same skillet, add an additional tablespoon of olive oil if needed. Heat over medium heat. Carefully place the folded quesadilla in the hot skillet and cook for about 3-4 minutes until golden brown and crispy. Flip and repeat on the other side, using additional oil as necessary.

          Repeat: Repeat the process with the remaining ingredients, cooking one quesadilla at a time.

            Serve: Remove the quesadillas from the skillet and let them cool for a minute before slicing them into wedges. Serve with salsa, sour cream, or avocado on the side.
