Crispy Sweet Potato Nachos

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon chili powder

½ teaspoon sea salt

1 cup black beans, drained and rinsed

1 cup shredded sharp cheddar cheese (or vegan cheese for a plant-based option)

1 cup pico de gallo (store-bought or homemade)

½ avocado, sliced

¼ cup fresh cilantro, chopped

¼ cup sour cream or Greek yogurt (optional for serving)

Lime wedges, for serving

Instructions
 

Prepare the Sweet Potatoes: Preheat your oven to 425°F (220°C). Wash and peel the sweet potatoes, then slice them into thin rounds (about 1/8 inch thick). You can also use a mandoline for even slices.

    Season the Sweet Potatoes: In a large mixing bowl, toss the sweet potato slices with olive oil, smoked paprika, garlic powder, chili powder, and sea salt until evenly coated.

      Bake the Sweet Potato Chips: Spread the seasoned sweet potato slices in a single layer on a parchment-lined baking sheet. Bake for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.

        Assemble the Nachos: Once the sweet potato slices are done, remove them from the oven. While they are still hot, layer the crispy sweet potato chips on a large serving platter. Sprinkle black beans over the chips, followed by an even layer of shredded cheese.

          Melt the Cheese: Return the nachos to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

            Top and Serve: Remove from the oven and immediately top with pico de gallo, sliced avocado, and chopped cilantro. Drizzle with sour cream or Greek yogurt if desired, and finish with fresh lime juice over the top.
