Ingredients

1 cup fresh spinach, chopped

1 cup artichoke hearts, drained and roughly chopped

1/2 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

1 cup breadcrumbs (panko for extra crunch)

Oil for frying (canola or vegetable oil)

Fresh parsley for garnish (optional)

Instructions

Prepare the Filling:

    - In a large mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, mozzarella cheese, minced garlic, onion powder, salt, black pepper, and crushed red pepper flakes. Mix until well combined and creamy.

      Form the Bites:

        - Using clean hands, scoop about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used, placing the formed bites on a parchment-lined baking sheet.

          Coat the Bites:

            - In a shallow dish, place the breadcrumbs. Roll each spinach artichoke ball in the breadcrumbs, ensuring they are fully coated. Press gently to help the breadcrumbs adhere.

              Heat the Oil:

                - In a large skillet, pour enough oil to cover the bottom, about 1/2 inch deep. Heat the oil over medium heat until it reaches 350°F (175°C). You can test it by dropping a breadcrumb in; if it sizzles, the oil is ready.

                  Fry the Bites:

                    - Carefully add the bites to the hot oil in batches—don’t overcrowd the skillet. Fry until golden brown, about 2-3 minutes on each side. Use a slotted spoon to transfer the cooked bites to a plate lined with paper towels to absorb excess oil.

                      Garnish and Serve:

                        - Once fried, garnish the bites with fresh parsley if desired. Serve them warm with your favorite dipping sauce, such as marinara or a creamy ranch.
