Crispy School Lunch Tacos

Ingredients
  

1 pound ground beef (or turkey)

1 tablespoon taco seasoning

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

1 cup sour cream

8 small flour tortillas

1 cup tortilla chips, crushed

Cooking oil (for frying)

Salt and pepper to taste

Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned, about 5-7 minutes. Drain excess fat and mix in the taco seasoning, black beans, corn, salt, and pepper. Cook for another 3-4 minutes until heated through. Set aside to cool slightly.

    Prepare Tortillas: Lay out the flour tortillas on a clean surface. In the center of each tortilla, spread a layer of the beef mixture (about 1/4 cup), then top with shredded lettuce, diced tomatoes, a sprinkle of shredded cheddar cheese, a dollop of sour cream, and a generous handful of crushed tortilla chips for crunch.

      Wrap Them Up: Fold in the sides of the tortilla, then roll it from the bottom up to fully enclose the filling. Ensure the ends are well-sealed to prevent any spillover.

        Fry the Tacos: Heat about 1/2 inch of cooking oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully place the tacos folded-side down into the skillet. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy. Work in batches to avoid overcrowding.

          Drain and Serve: Using a slotted spoon, remove the crispy tacos from the oil and drain them on paper towels. Serve them hot with additional sour cream, salsa, or guacamole on the side for dipping.
