Crispy Roast Potatoes

2 lbs baby potatoes (or new potatoes)

4 tablespoons olive oil

1 teaspoon sea salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried rosemary (or fresh if available)

Optional: freshly chopped parsley for garnish

Optional: lemon wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Rinse the baby potatoes under cold water and scrub to remove any dirt. Pat them dry with a kitchen towel.

      Boil the Potatoes: Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring to a boil over high heat and cook for 10-15 minutes, or until the potatoes are fork-tender but not falling apart.

        Drain and Rough Up: Drain the potatoes in a colander. Allow them to cool for a few minutes, then return them to the pot. Gently shake the pot to roughen the surface of the potatoes; this will create extra crispy edges.

          Season the Potatoes: Drizzle the olive oil over the potatoes, then sprinkle with sea salt, black pepper, garlic powder, smoked paprika, and dried rosemary. Toss gently until the potatoes are evenly coated in the oil and spices.

            Roast: Spread the potatoes out in a single layer on a parchment-lined baking sheet. Make sure there’s some space between each potato to allow them to roast evenly. Roast in the preheated oven for 30-35 minutes, flipping halfway, until they're golden brown and crispy on the outside.

              Garnish and Serve: Once done, remove the potatoes from the oven. If using, sprinkle with freshly chopped parsley for a pop of color. Serve hot with lemon wedges on the side for an added zing.
