Crispy Ranch Cauliflower Tots

1 medium head of cauliflower, cut into florets

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/4 cup almond flour (or any gluten-free flour)

1 large egg

2 teaspoons ranch seasoning mix

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Cooking spray or olive oil, for crisping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

    Steam the Cauliflower: In a pot, steam the cauliflower florets for about 8-10 minutes until they are soft. Alternatively, you can microwave them in a covered bowl with a splash of water for about 6-7 minutes.

      Mash the Cauliflower: Once cooked, drain any excess water and let the cauliflower cool slightly. Transfer it to a large mixing bowl and mash it with a fork or potato masher until you achieve a smooth consistency.

        Combine Ingredients: Add the shredded mozzarella cheese, grated Parmesan cheese, almond flour, egg, ranch seasoning, garlic powder, onion powder, salt, and pepper to the mashed cauliflower. Mix well until fully combined.

          Form the Tots: Using your hands, scoop out small portions of the mixture and shape them into tot-like cylinders (about the size of a small egg). Place them on the prepared baking sheet, ensuring there’s space in between each tot.

            Crisp Them Up: Lightly spray or brush the tops of the tots with cooking spray or olive oil. This will help them crisp up beautifully in the oven.

              Bake: Bake the cauliflower tots in the preheated oven for 25-30 minutes, turning them halfway through for even browning, until they are golden brown and crispy on the outside.
