1 lb (450g) large portobello mushrooms, cleaned and sliced into fry shapes

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper to taste

Cooking spray or olive oil for drizzling

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
