For the Fish Sticks:

1 pound fresh white fish fillets (e.g., cod, haddock, or tilapia)

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Cooking spray or olive oil

For the Tartar Sauce:

1 cup mayonnaise

2 tablespoons dill pickle relish

1 tablespoon capers, drained and chopped

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Fish: Pat the fish fillets dry with a paper towel and cut them into even sticks (about 1 inch wide).

      Set Up Breading Station: In three separate shallow bowls, place the flour seasoned with salt, pepper, smoked paprika, garlic powder, and onion powder in the first bowl. In the second bowl, beat the eggs until smooth. In the third bowl, add the panko breadcrumbs.

        Bread the Fish Sticks: Dip each fish stick first into the flour mixture, ensuring it’s fully coated. Shake off any excess. Next, dip it into the beaten eggs, and finally coat it with panko breadcrumbs, pressing gently to adhere. Place the breaded fish sticks onto the lined baking sheet.

          Bake the Fish Sticks: Lightly spray the tops of the fish sticks with cooking spray or drizzle with olive oil. Bake in the preheated oven for 15-20 minutes, flipping halfway through, until golden and crispy.

            Make the Tartar Sauce: While the fish sticks are baking, prepare the tartar sauce. In a medium bowl, mix the mayonnaise, dill pickle relish, chopped capers, lemon juice, and Dijon mustard. Season with salt and pepper to taste. Refrigerate until ready to serve.
