Ingredients

12 large fresh jalapeño peppers

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

½ cup grated parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko for extra crunch)

Oil for frying (vegetable or canola)

Instructions

Prep the Jalapeños: Begin by preheating your oven to 400°F (200°C). Cut the jalapeños in half lengthwise and carefully remove the seeds and membranes using a spoon or a small knife to decrease the heat level. Set aside.

Prepare the Cheese Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar, grated parmesan, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until all ingredients are thoroughly combined and creamy.

Stuff the Jalapeños: Use a spoon or a piping bag to carefully fill each jalapeño half with the cheese mixture, pressing it in gently but ensuring it is not overflowing.

Set Up Breading Stations: In three separate shallow bowls, prepare your dredging stations: one with flour, one with whisked eggs (add a pinch of salt), and one with breadcrumbs.

Bread the Jalapeños: Dip each stuffed jalapeño in the flour first, coating it completely. Shake off any excess flour, then plunge it into the egg mixture, allowing the excess to drip off. Finally, roll it in the breadcrumbs until evenly coated. Repeat with all jalapeños.

Fry the Poppers: In a deep skillet, heat about 1-2 inches of oil over medium heat until it reaches 350°F (175°C). Working in batches, carefully place the breaded jalapeños in the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer the poppers onto a paper towel-lined plate to drain excess oil.

Bake for Extra Crisp (Optional): For an extra crispy texture, place the fried jalapeño poppers on a baking sheet and bake them in the preheated oven for 5-7 minutes.

Serve: Allow the poppers to cool slightly before serving. Pair with a side of ranch or your favorite dipping sauce. Enjoy the crunchy, cheesy delight!
