Crispy Garlic Butter Potatoes

1.5 lbs baby baby potatoes (or new potatoes)

4 tablespoons unsalted butter

4 tablespoons olive oil

6 cloves garlic, minced

1 teaspoon dried rosemary (or 2 teaspoons fresh, chopped)

1 teaspoon dried thyme (or 2 teaspoons fresh, chopped)

1 teaspoon paprika

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Parmesan cheese, grated (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for a crispy finish.

    Prepare the Potatoes: Wash the baby potatoes under cold water, scrubbing any dirt off. Pat them dry with a kitchen towel. If some potatoes are larger than others, cut them in half to ensure even cooking.

      Parboil the Potatoes: Fill a large pot with water and add a generous amount of salt. Bring to a boil over high heat. Once boiling, add the potatoes and cook for 10-15 minutes, or until they are just fork-tender. Drain and allow them to cool for a few minutes.

        Smash the Potatoes: On a baking sheet lined with parchment paper, space the parboiled potatoes apart. Use the bottom of a glass or a potato masher to gently smash each potato until flattened but not completely broken apart.

          Make the Garlic Butter: In a small saucepan, melt the butter and olive oil together over medium heat. Once melted, add the minced garlic, dried rosemary, dried thyme, paprika, salt, and pepper. Stir frequently for about 2-3 minutes until fragrant. Remove from heat.

            Coat the Potatoes: Drizzle or brush the garlic butter generously over the smashed potatoes, ensuring they are well-coated.

              Bake for Crispiness: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the potatoes are golden brown and crispy. For extra crispiness, flip the potatoes halfway through cooking.
