For the Falafel:

1 cup dried chickpeas (soaked overnight)

1 small onion, roughly chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

Salt and pepper, to taste

Oil for frying

For the Salad:

4 cups mixed greens (spinach, arugula, romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red bell pepper, diced

1/4 red onion, thinly sliced

1 avocado, sliced

For the Tahini Dressing:

1/4 cup tahini

2 tbsp lemon juice

1 clove garlic, minced

2-3 tbsp water (to reach desired consistency)

Salt, to taste

Optional Toppings:

Crumbled feta cheese

Pita chips

Extra parsley/Cilantro for garnish

Instructions
 

Prepare the Falafel Mixture:

    - In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until you have a coarse paste, but do not over-blend. Transfer the mixture to a bowl and refrigerate for about 30 minutes.

      Form the Falafel Balls:

        - Once chilled, scoop out about 2 tablespoons of the mixture and roll it into a ball (or a patty if you prefer). Repeat until all the mixture is formed into balls.

          Fry the Falafel:

            - In a deep skillet, heat oil over medium-high heat (about 350°F/175°C). Carefully add the falafel balls (in batches if necessary) and fry until golden brown and crispy on all sides, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.

              Make the Salad:

                - In a large bowl, toss together the mixed greens, cherry tomatoes, cucumber, red bell pepper, and red onion.

                  Prepare the Tahini Dressing:

                    - In a small bowl, whisk together tahini, lemon juice, minced garlic, and enough water to achieve a smooth and pourable consistency. Adjust salt to taste.

                      Assemble the Bowl:

                        - Divide the salad mixture among bowls. Top with crispy falafel, sliced avocado, and any optional toppings you desire (crumbled feta, pita chips, etc.).

                          Drizzle with Dressing:
