1 medium eggplant, sliced into ½-inch thick rounds

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon dried oregano

¼ teaspoon cayenne pepper (optional for spice)

Salt and pepper to taste

Olive oil spray

Marinara sauce or tzatziki for dipping (optional)

Prepare the Eggplant: Start by salting the eggplant slices. Place the rounds in a colander and sprinkle them generously with salt. Let them sit for about 30 minutes to draw out excess moisture and bitterness. Rinse under cold water and pat dry with paper towels.

    Set Up Your Breading Station: In three separate shallow bowls, set up your breading station. In the first bowl, place the flour, seasoning it with a pinch of salt and pepper. In the second bowl, beat the two large eggs until well mixed. In the third bowl, combine the panko breadcrumbs with garlic powder, onion powder, smoked paprika, oregano, and cayenne pepper.

      Coat the Eggplant Rounds: Dip each eggplant round first into the flour, shaking off any excess. Then, dip in the beaten eggs, ensuring an even coating. Finally, press the round into the panko mixture, covering it fully and firmly.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes while you finish breading the eggplant.

          Arrange and Spray: Place the breaded eggplant rounds in a single layer in the air fryer basket. Lightly spray the tops with olive oil spray to help them crisp up during cooking.

            Air Fry the Eggplant Rounds: Cook the eggplant rounds in the air fryer at 375°F (190°C) for about 12-15 minutes, flipping halfway through, until golden brown and crispy. You may need to do this in batches depending on your air fryer’s capacity.
