Crispy Chickpea Caesar Salad

1 can (15 oz) chickpeas, rinsed and drained

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 teaspoon dried oregano

1 romaine heart, chopped

1 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese (or nutritional yeast for vegan option)

1/4 cup Caesar dressing (store-bought or homemade)

Fresh lemon wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: On a baking sheet, spread out the rinsed and drained chickpeas. Drizzle with olive oil, and sprinkle with garlic powder, smoked paprika, oregano, salt, and pepper. Toss to coat evenly.

      Roast the Chickpeas: Roast in the preheated oven for 25-30 minutes, stirring halfway through, until golden brown and crispy.

        Prepare the Salad Base: While the chickpeas are roasting, chop the romaine lettuce and halve the cherry tomatoes. Place them in a large salad bowl.

          Mix the Caesar Dressing: If making homemade dressing, whisk together 2 tablespoons mayonnaise, 1 tablespoon Dijon mustard, 2 teaspoons Worcestershire sauce, a squeeze of lemon juice, salt, and pepper. Adjust to taste. If using store-bought, measure out 1/4 cup in a bowl.

            Assemble the Salad: Once the chickpeas are crispy and golden, let them cool slightly. Add the roasted chickpeas to the salad bowl along with the cherry tomatoes and Parmesan cheese. Drizzle the Caesar dressing on top and toss gently to combine.
