1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch ginger, grated

1 small onion, finely chopped

1 cup bell peppers, diced (red, yellow, or both for color)

1 cup water chestnuts, chopped

3 green onions, chopped

3 tablespoons soy sauce (low sodium preferred)

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1 teaspoon sugar

Salt and pepper to taste

1 head of iceberg or butter lettuce, leaves separated and washed

Optional toppings: Sriracha, chopped cilantro, crushed peanuts, lime wedges

Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

    Cook the Chicken: Add the ground chicken to the skillet. Break it apart with a spoon or spatula. Cook for about 5-7 minutes until the chicken is browned and cooked through.
