8 small flour tortillas

1 cup assorted charcuterie meats (salami, prosciutto, and chorizo), finely diced

1 cup mixed cheeses (cheddar, gouda, and blue cheese), shredded

1 cup fresh arugula

½ cup pickled red onions

½ cup cherry tomatoes, halved

¼ cup Kalamata olives, pitted and sliced

1 avocado, sliced

¼ cup fresh basil leaves, chopped

¼ cup balsamic glaze

Olive oil for frying

Salt and pepper to taste

Prepare the Tortillas: Brush each tortilla lightly with olive oil on both sides. Heat a skillet over medium-high heat and lightly fry the tortillas one at a time for about 30 seconds on each side until they are slightly crispy. Set aside on a paper towel to drain excess oil.

    Make the Filling: In a skillet, combine the diced charcuterie meats over medium heat. Cook for about 3-5 minutes until the meats are heated through and slightly crispy.
