Crispy Black Bean Quesadillas

1 can (15 oz) black beans, drained and rinsed

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup corn (fresh, canned, or frozen)

1 small red onion, finely chopped

1/2 bell pepper, diced (any color)

2 cloves garlic, minced

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas (10-inch size)

Olive oil or butter for frying

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Fresh lime wedges (for serving)

Instructions
 

Prepare the Filling: In a large bowl, combine the rinsed black beans, cheddar cheese, Monterey Jack cheese, corn, red onion, bell pepper, garlic, cumin, smoked paprika, and salt and pepper. Mix until well combined.

    Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Spread an even layer of your black bean mixture over half of the tortilla. Fold the tortilla in half over the filling so it forms a half-moon shape. Repeat with the remaining tortillas and filling.

      Heat the Pan: In a large skillet, heat 1-2 tablespoons of olive oil or butter over medium heat.

        Cook the Quesadillas: Once the oil is hot, carefully place one quesadilla in the skillet. Cook for about 3-4 minutes, or until the bottom is golden brown and crispy. Flip the quesadilla and cook for another 3-4 minutes on the other side until it is golden and the cheese has melted.

          Repeat: Transfer the cooked quesadilla to a cutting board and let it cool for a minute. Cut it into wedges. Repeat the cooking process for the remaining quesadillas, adding more oil or butter to the skillet as necessary.

            Serve: Arrange the quesadilla wedges on a serving platter. Garnish with chopped cilantro and serve with sour cream or Greek yogurt and fresh lime wedges on the side.
