2 medium zucchini, cut into long strips (about 1/4 inch thick)

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tablespoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1-2 tablespoons olive oil

1 cup marinara sauce, for dipping

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Rinse the zucchini under cold water and dry thoroughly with paper towels. Cut each zucchini in half, then slice each half into long strips.

      Set Up Breading Stations:

        - In one bowl, add the flour seasoned with a pinch of salt and pepper.

          - In a second bowl, beat the eggs together until well combined.

            - In a third large bowl, mix the panko breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, and onion powder.

              Coat the Zucchini:

                - Dip each zucchini strip into the flour, shaking off any excess.

                  - Next, dip it into the beaten eggs, allowing any excess to drip off.

                    - Finally, roll it in the breadcrumb mixture, pressing lightly to ensure it sticks well.

                      Arrange on Baking Sheet: Place the breaded zucchini fries in a single layer on the prepared baking sheet. Drizzle olive oil over the top to help them crisp up during baking.

                        Bake: Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until golden brown and crispy.

                          Prepare Marinara Dipping Sauce: While the fries are baking, gently heat the marinara sauce in a small saucepan over low heat or microwave it for about 1-2 minutes until warm.
