2 medium zucchinis

1 cup of breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil spray (or regular olive oil for extra flavor)

Optional: Fresh parsley for garnish

Preheat your oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy clean-up and to help crisp the fries.

    Prepare the zucchinis: Wash and dry the zucchinis. Cut off the ends, then slice each zucchini into quarters lengthwise, creating fry-like shapes. Pat them dry with a paper towel to remove excess moisture, which helps in achieving crispiness.

      Set up a breading station: In a shallow bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. In another bowl, beat the eggs until well mixed.

        Bread the zucchini fries: Dip each zucchini piece first into the beaten eggs, allowing any excess to drip off, and then coat it in the breadcrumb mixture, pressing down lightly to adhere. Place each breaded zucchini fry on the prepared baking sheet.
