2 medium zucchinis

1 cup breadcrumbs (Panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/4 cup all-purpose flour

Cooking spray or olive oil (for greasing)

Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or brush it with olive oil.

    Prepare the zucchinis: Wash and dry the zucchinis. Cut them into thin strips, about 1/4 inch wide, to resemble fries.

      Set up the dredging stations: In a shallow bowl, place the flour. In another bowl, whisk the eggs. In a third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.

        Coat the zucchini fries: Take a zucchini strip and dip it into the flour, ensuring it’s well coated. Then, dip it into the egg mixture, allowing excess to drip off. Finally, roll it in the breadcrumb mixture, pressing gently to adhere the crumbs. Place the coated zucchini onto the prepared baking sheet. Repeat this step for all zucchini strips.
