Crispy Baked Tofu Nuggets

1 block (14 oz) firm tofu, pressed and drained

1 cup panko breadcrumbs

1/2 cup all-purpose flour (or gluten-free flour)

1/2 cup plant-based milk (almond, soy, or oat)

2 tablespoons nutritional yeast

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

Cooking spray (or olive oil for drizzling)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Tofu: Cut the pressed tofu into bite-sized cubes or nuggets (about 1-inch pieces).

      Set Up a Breading Station: In one bowl, place the all-purpose flour and season with salt and pepper. In a second bowl, combine the plant-based milk and nutritional yeast, whisking until mixed. In a third bowl, combine the panko breadcrumbs with garlic powder, onion powder, smoked paprika, and cayenne pepper.

        Bread the Tofu: Dip each tofu piece into the flour, making sure to coat it well. Shake off any excess flour. Next, dip the floured tofu into the plant-based milk mixture, allowing any excess to drip off, then roll it in the seasoned panko breadcrumbs until fully covered. Place the breaded tofu nuggets on the prepared baking sheet.

          Bake the Nuggets: Once all tofu pieces are breaded, lightly spray or drizzle with cooking oil to help them crisp up. Bake in the preheated oven for 25-30 minutes, turning halfway through, until golden and crispy on the outside.
