Ingredients

1 lb chicken breast tenderloins

1 cup buttermilk

1 packet (1 oz) ranch seasoning mix

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup whole wheat flour

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp black pepper

1/4 tsp salt

Olive oil spray

Optional: Fresh parsley for garnish

Instructions

Marinate the Chicken: In a medium bowl, combine buttermilk and ranch seasoning mix. Add the chicken tenderloins and ensure they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

Prepare the Coating: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a shallow dish, combine the breadcrumbs, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well to combine.

Dredge the Chicken: Remove the chicken from the buttermilk marinade, letting any excess drip off. First, coat each tender in whole wheat flour, shaking off any excess. Then dip it back into the buttermilk mixture, and finally dredge it in the breadcrumb mixture, pressing lightly to ensure that the coating sticks well.

Arrange on Baking Sheet: Place the coated chicken tenders on the prepared baking sheet, ensuring they are spaced apart for even cooking. Lightly spray the tops with olive oil for that perfect crispy finish.

Bake the Chicken Tenders: Bake in the preheated oven for about 20-25 minutes, or until the tenders are golden brown and cooked through. You can flip them halfway through baking for even browning.

Serve: Once cooked, remove from the oven and let cool for a few minutes. Serve warm with your choice of dipping sauce such as ranch, honey mustard, or BBQ. Garnish with fresh parsley if desired.
