Ingredients

For the Potato Wedges:

4 large russet potatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for a kick)

For the Zesty Garlic Dip:

1 cup Greek yogurt or sour cream

2 tablespoons mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon dried dill

Salt and pepper to taste

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Cut each potato in half lengthwise, then cut each half into 3-4 wedges, depending on your desired thickness.

Season the Wedges: In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper. Add the potato wedges to the bowl and toss them until they are evenly coated in the seasoning mix.

Arrange on Baking Sheet: Spread the seasoned potato wedges in a single layer on the prepared baking sheet, ensuring they are not overcrowded to allow for crispness.

Bake the Potatoes: Bake in the preheated oven for about 35-40 minutes, flipping the wedges halfway through the baking time, until they are golden brown and crispy.

Make the Zesty Garlic Dip: While the wedges are baking, whisk together Greek yogurt (or sour cream), mayonnaise, minced garlic, lemon juice, dried dill, and a pinch of salt and pepper in a small bowl. Adjust the seasoning to taste.

Serve: Once the potato wedges are done baking, remove them from the oven and allow them to cool for a few minutes. Serve the crispy potato wedges warm with the zesty garlic dip on the side.
