Ingredients

2 medium zucchinis, cut into fry shapes

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon paprika

½ teaspoon onion powder

¼ teaspoon black pepper

2 large eggs

½ cup all-purpose flour

Cooking spray or olive oil for frying

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Zucchini: Slice the zucchinis into fry shapes (approximately 1/4-inch thick). Make sure they are all similar in size for even cooking.

Set Up Breading Station: In a shallow bowl, place the flour. In another bowl, beat the two eggs until well mixed. In a third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, onion powder, and black pepper.

Coat Zucchini Fries: Start by dredging each zucchini fry in flour, making sure it's fully coated. Shake off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off, and finally coat it in the breadcrumb mixture, pressing lightly to adhere.

Arrange on Baking Sheet: Place the coated zucchini fries in a single layer on the prepared baking sheet. Make sure they aren’t overcrowded, as this will help them become crispy.

Add Oil: Lightly spray the tops of the zucchini fries with cooking spray or drizzle a small amount of olive oil over them to help with browning.

Bake: Bake in the preheated oven for about 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy.

Serve: Remove from the oven and let cool slightly before serving. Enjoy your Crispy Baked Parmesan Zucchini Fries warm with your favorite dipping sauce, such as marinara or ranch.
