Ingredients

For the Fish Sticks:

1 lb white fish fillets (cod, haddock, or tilapia)

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Cooking spray or olive oil for drizzling

For the Tartar Sauce:

1/2 cup mayonnaise

2 tablespoons dill pickles, finely chopped

1 tablespoon capers, rinsed and chopped

1 teaspoon Dijon mustard

1 teaspoon lemon juice

Salt and pepper to taste

Fresh dill or parsley for garnish (optional)

Instructions

Prepare the Fish:

    - Preheat your oven to 425°F (220°C).

      - Rinse and pat dry the fish fillets. Cut them into sticks about 1 inch wide and 3-4 inches long.

        Set Up Breading Stations:

          - In a shallow dish, place the flour; season it with salt, pepper, and paprika. In another dish, beat the eggs. In a third dish, combine the panko breadcrumbs, garlic powder, and onion powder.

            Bread the Fish:

              - Dip each fish stick first into the flour, shaking off any excess. Then dip it into the beaten eggs, letting any excess drip off. Finally, coat the fish stick in the seasoned panko breadcrumbs, pressing gently to adhere.

                Bake the Fish:

                  - Line a baking sheet with parchment paper or lightly grease it with cooking spray. Arrange the breaded fish sticks in a single layer on the sheet. Lightly spray or drizzle with olive oil for extra crispiness.

                    - Bake in the preheated oven for 15-20 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 145°F / 63°C).

                      Make the Tartar Sauce:

                        - In a mixing bowl, combine the mayonnaise, chopped dill pickles, capers, Dijon mustard, and lemon juice. Season with salt and pepper to taste. Mix until well combined. Optionally, garnish with fresh dill or parsley.

                          Serve:

                            - Once the fish sticks are done baking, serve them hot with the homemade tartar sauce on the side.
