Crispy Baked Feta Pasta Rolls

12 lasagna noodles

1 block (8 oz) of feta cheese

2 cups spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional)

1 cup marinara sauce

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Cook the lasagna noodles for about 8-10 minutes until al dente. Drain and rinse under cold water to stop the cooking process, then set aside on a greased baking sheet to prevent sticking.

      Prepare the Filling: In a large mixing bowl, combine the feta cheese, chopped spinach, ricotta cheese, Parmesan cheese, olive oil, minced garlic, oregano, salt, pepper, and red pepper flakes. Mix until well combined and creamy.

        Assemble the Rolls: Lay a lasagna noodle flat on a clean surface. Spread a generous spoonful of the feta filling along one end of the noodle. Carefully roll it up, starting from the end with the filling. Place it seam side down in a greased baking dish. Repeat with the remaining noodles and filling.

          Add Sauce and Cheese: Once all the rolls are in the dish, pour the marinara sauce over the top, ensuring the rolls are well covered. Crumble any remaining feta over the sauce.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes or until the top is golden and crispy.

              Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil before serving.
