Creamy Zucchini Soup

4 medium zucchinis, chopped

1 large onion, diced

3 cloves garlic, minced

1 large potato, peeled and diced

4 cups vegetable broth

1 cup heavy cream or coconut milk (for a dairy-free option)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt (to taste)

½ teaspoon black pepper (to taste)

2 tablespoons fresh lemon juice

Fresh basil leaves for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 4–5 minutes until translucent. Stir in the minced garlic and sauté for another 1 minute until fragrant.

    Add Zucchini and Potato: Add the chopped zucchinis and diced potato to the pot. Stir well, and cook for an additional 5 minutes, allowing them to soften slightly.

      Pour in Broth: Pour the vegetable broth into the pot, ensuring all ingredients are submerged. Bring to a boil, then reduce the heat to low and let it simmer uncovered for 15–20 minutes, or until the vegetables are tender.

        Blend the Soup: Using an immersion blender, blend the soup until it's smooth and creamy. (Alternatively, you can carefully transfer the soup to a blender in batches to blend, then return it to the pot.)

          Add Cream and Seasoning: Stir in the heavy cream (or coconut milk), dried thyme, salt, and black pepper. Heat the soup over low until warmed through, about 5 minutes. Do not boil.

            Finish with Lemon: Remove from heat and stir in fresh lemon juice to brighten the flavors.
