12 oz pasta (penne or fusilli work best)

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

2 cups fresh spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Sauté the Onion and Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until it becomes translucent, about 4-5 minutes. Add minced garlic and sauté for an additional minute until fragrant.

      Add Crushed Tomatoes: Stir in the crushed tomatoes, ensuring to deglaze the pan. Cook for about 3-4 minutes until slightly thickened.
