1 lb fresh or frozen gnocchi

2 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 cup heavy cream

1 tsp dried basil

1 tsp dried oregano

½ tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup baby spinach

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions. Once they rise to the surface, about 2-3 minutes, drain and set aside.
