Ingredients

12 oz spaghetti

2 tablespoons olive oil

4 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 tablespoon sugar (optional; to balance acidity)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

Salt and pepper to taste

1 cup fresh basil leaves, torn

Extra basil leaves and Parmesan for garnish

Instructions

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add minced garlic and sauté until fragrant, about 1 minute, taking care not to brown it.

Prepare the Sauce: Pour in the crushed tomatoes and stir in sugar (if using), oregano, and red pepper flakes. Bring the mixture to a gentle simmer, allowing it to cook for about 10-15 minutes to thicken slightly.

Add Cream: Lower the heat and slowly stir in the heavy cream, mixing well until the sauce turns a beautiful orange hue. Add the grated Parmesan cheese and stir until it's fully melted and incorporated into the sauce.

Mix in Pasta: Add the drained spaghetti to the skillet, tossing to coat the pasta thoroughly in the creamy tomato sauce. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

Season and Serve: Stir in the torn basil leaves, and season with salt and pepper to taste. Remove from heat and serve immediately, garnishing with additional basil leaves and Parmesan cheese on top.
