1 medium onion, chopped

4 cloves garlic, minced

2 cans (14.5 oz each) diced tomatoes (with juices)

2 cups vegetable broth

1 teaspoon sugar (optional)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup heavy cream (or coconut milk for a vegan option)

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

1 tablespoon balsamic vinegar (optional)

Crusty bread or grilled cheese for serving

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and continue cooking for another 1-2 minutes until fragrant, being careful not to let it burn.

    Add Tomatoes: Pour in the diced tomatoes with their juices. Stir in the vegetable broth, sugar (if using), salt, and black pepper. Bring the mixture to a simmer.
