12 oz (340g) pasta of your choice (penne or fusilli work well)

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (preferably fire-roasted)

1 cup heavy cream

1 teaspoon dried basil or 1 cup fresh basil, chopped

Salt and pepper, to taste

½ cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish

Cook Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté Garlic: In the same pot or a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.

      Add Tomatoes: Pour in the canned diced tomatoes (with their juices) and bring to a simmer. Cook for about 3-4 minutes, allowing the flavors to meld.

        Create Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir well, then mix in the dried or fresh basil. Season with salt and pepper to taste. Let it simmer for another 2-3 minutes.
