Ingredients

1 lb (450g) potato gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon sugar (to balance acidity)

Salt and pepper to taste

1 cup fresh basil leaves, torn (plus extra for garnishing)

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese (plus more for serving)

Instructions

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Drain and set aside.

Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn it.

Add Tomatoes: Pour in the crushed tomatoes, stirring to combine. Add the sugar to balance the acidity, and season with salt, pepper, and red pepper flakes if you like some heat. Let it simmer for about 5 minutes.

Make it Creamy: Reduce the heat to low and stir in the heavy cream. Mix well and allow the sauce to cook for another 2-3 minutes until it thickens slightly.

Mix Gnocchi and Sauce: Add the cooked gnocchi to the skillet and gently fold them into the creamy tomato basil sauce. Make sure the gnocchi are well-coated.

Add Fresh Basil: Stir in the torn basil leaves and 1/2 cup of grated Parmesan cheese until melted and combined. Adjust seasoning with more salt and pepper if desired.

Serve: Spoon the creamy tomato basil gnocchi into bowls. Garnish with extra basil and a sprinkle of Parmesan cheese.

Enjoy: Serve immediately while hot and creamy!
