Creamy Sun Dried Tomato Chicken Pasta

2 boneless, skinless chicken breasts

8 oz (about 227g) fettuccine or your preferred pasta

1 cup sun-dried tomatoes in oil, drained and chopped

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

2 cups fresh spinach

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves for garnish

Cook the Pasta: Begin by boiling a large pot of salted water. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side until fully cooked and golden brown. Remove chicken from the skillet and let it rest for a few minutes before slicing it into strips.

      Make the Sauce: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Stir in the sun-dried tomatoes, cooking for another 2 minutes. Pour in the chicken broth and bring to a simmer.

        Add Cream: Reduce heat to low and stir in the heavy cream. Allow the mixture to simmer for about 3-5 minutes until it thickens slightly. Add the grated Parmesan cheese, stirring until melted and well combined. If the sauce is too thick, you can add some reserved pasta water to achieve your desired consistency.

          Combine: Add the fresh spinach to the sauce and stir until wilted. Finally, toss in the cooked pasta and sliced chicken, mixing everything together to ensure the pasta is well-coated in the creamy sauce. Taste and adjust the seasoning with more salt and pepper if needed.

            Serve: Divide the creamy sun-dried tomato chicken pasta among plates and garnish with fresh basil leaves and additional Parmesan if desired.
